  • 56 grams of egg whites (about two large eggs’ worth)
  • ¼ cup granulated sugar


  1. Preheat the oven to 375 degrees Fahrenheit.
  2. Line a baking sheet with parchment paper and set it aside.
  3. Whisk together the almond flour, powdered sugar, and salt in a medium bowl.
  4. In a large bowl or the bowl of a stand mixer, whisk together the egg whites and granulated sugar until stiff peaks form.
  5. Gently fold the dry ingredients into the egg white mixture until well combined.
  6. Transfer the batter to a piping bag fitted with a round tip.
  7. Pipe small circles onto the prepared baking sheet.
  8. Bake for 12-14 minutes, or until golden brown.
  9. Cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.
